Chocolate
We buy our chocolate from the Original Hawaiian Chocolate Factory in Kona, Hawaii, Big Island. Pam and Bob Cooper grow and process chocolate from 100% Hawaiian Cacao. We use the chocolate to make our "Dark Chocolate RaspberryTruffleTart" as well as our "Original Hawaiian Chocolate Factory Warm Cake".

Fish
We serve only Fresh Local Fish. Kauai’s Fishermen and women are integral contributors to the "Fresh from the Net" section of our menu, which changes according to the catch. Fresh Island Fish Co. also provides us with fish from the Honolulu auction block.
Greens
We buy lettuces from Dante Family Farms in Kapaa, Hawaii, Kauai. Their arugula is featured in our "Arugula Salad with Pickled Beets and Fresh Corn" and you will find their mixed greens in our "Mixed Green Salad with Kunana Dairy Chevre".
Coffee
Our French Press Coffee is Peaberry from Kauai Coffee, located in Hanapepe, Hawaii, Kauai. Hawaiian Isle Coffee Roasters roasts up our Kapaa Blend.

We buy mushrooms from Hamakua Heritage Farms, located in Hamakua, Hawaii, Big Island. Find them in our "Awesome Shiitake Meatloaf" and "Pork Tenderloin with Mushroom Marsala Cream". We also feature shrooms from Kauai Fungi, located in Hanalei, Hawaii, Kauai.

Warabi
Ueunten Farms produce is special, and their warabi (fiddlehead fern) is no exception. We serve the fern from Glenna and Gary’s farm in Lawai, Kauai, Hawaii on our Happy Hour Tasting Menu.
Goat Cheese
The Whooten family farm, Kauai Kunana Dairy, is located in Kilauea, Hawaii, Kauai. Here they produce feta cheese you’ll find in our "Sweet Potato Ravioli" and a creamy chevre we serve on our "Mixed Green Salad" and in our "Lobster and Goat Cheese Wontons".

Vanilla
The Hawaiian Vanilla Company is located in Hamakua, Hawaii, Big Island. We use their premium, high quality Vanilla Beans in our desserts, especially our "Hawaiian Vanilla Bean Crème Brulee". Also try a "Big Island Orchid" - a Hukilau signature cocktail made with vodka infused with the local vanilla beans.

Wailua Country Store & Sanchez Ranch provides local grass fed beef which we use in our awesome mushroom meatloaf. A’akukui Ranch, Duane Shimogawa provides free range grass-fed hormone free Kauai beef from 800 acres of land on the South Shore.
