Buy Local
we strive to use local products and buy from local farmers and fishermen. See our local farms and products page for more info and links!
CSA
we participate in our local Community Supported Agriculture (CSA) program
Donate Food
we donate leftovers to the Kauai Salvation Army
Kitchen Scraps
all edible food waste is picked up by a local pig farmer nightly
Vegetable Oil Recycling
spent vegetable oil which is recycled locally into bio-fuel
Composting
excess vegetable scraps and coffee grounds are used in our onsite composter, which feeds our herb garden
Gardening
our herb garden, created by staff members, provides specialty herbs and garnishes to the restaurant
Wine Cork Re-use
we collect wine corks and re-use them in potted plants
Battery & Fuel Reduction
we use rechargeable tea light candles to eliminate the use of fuel for table top lighting
Biodegradable Takeout Containers
no more styrofoam!
Reduce Electricity
we use energy efficient light bulbs wherever possible, we turn off lights in areas not in use... sometimes it's the little things...
Recycle
cardboard, glass, plastic, bimetals, and "HI 5" (deposit) items
Spent Crayons
we collect them for a local candle maker
Paper Reduction & Re-use
online reservation system reduces paper usage, bulk reusable paper is recycled to local pre-schools as drawing paper, we re-use paper to create paper pads for server use and other office needs…we are obsessed with reducing our paper trail!
Shred
we shred and compost office paper, which feeds our garden
Proactivity
we have appointed a manager to implement daily "Green" practices and research new ideas
